    Ha Giang is very famous with unique ethnic dishes, they are always serve with the special drink made by H’mong people: the corn wine, the drink contains the warm relationships between people in the Karst Plateau.

    Corn wine in Ha Giang is cooked from the unique material which is planted in the terraced field of Hmong people – corn. Corn is fermented by a special ferment made from the more than 30 different leaves and herbs in the forest. This is tradional ferment so you will feel the sweet and scent of corn and the firm of ferment. Maybe the combination of quintessence of sky and land of the mountainous are, therefore, the corn is very firm and nutritional here.   The alcohol content in this wine is not high as the one in the plain, only around 25 to 30 percent of alcohol content, so the drinkers will not feel tired or if you get drunk without any headache or dizziness.

    To get the biggest corn seeds to make corn wine, Hmong ethnic people have to carry every basket of soil into the holes of the rocks in the high mountain and grow corn from these. Tand then investigate each county in which to plant corn. There are many efforts and hard working to make of the corn wine. Even the rocks are hard, the weather is harsh, the ethnic people still fight the Mother Nature to grow the corn field.

    Corn is grown in 4 months. When the corn seeds are firm and yellow, Hmong people start to harvest, they carry the basket on their back with full of corn. The corn fields normally are very far away from their home and in the up high mountains. They walk back home very  heavily and hard working with around 30 to 40 kg of corn on the high and steep mountain to bring the biggest corn seeds to make the corn wine.

    Even growing corn is very hard working but Hmong people never forget the moment of relaxing. Making corn wine becomes a hobby of not only men but also women and young people. They make the corn wine not only for drinking but also for giving as a gift and selling in the market. Almost all of houses in the village reserve several liters of corn wine.

    Corn wine is used on New Year Holiday, the feast and the weekly local markets. One special thing when you see in the weekly local market is men and women drink corn wine and talk to each other together in groups. Corn wine becomes a connection between people in the market.
